Today is Pancake Day. Yummy!

Shrove Tuesday is the day before Ash Wednesday (the first day of Lent), observed in many Christian countries through participating in confession and absolution, the ritual burning of the previous year's Holy Week palms, finalizing one's Lenten sacrifice, as well as eating pancakes and other sweets. (Wikipedia) As with most European Christian traditions, Shrove Tuesday, or Pancake Day, started out as a Pagan celebration.

To celebrate it together with you, I'd like to share my easy - gluten free - dairy free - kids approved pancake recipe. Ingredients 3 tbsp gluten-free porridge oat (grounded) 1 medium Free Range Egg, beaten 3 tbsp oat milk 2 tbsp maple syrup 1 tbsp olive oil Pinch of salt 1 tsp cinnamon 1 tsp orange zest 100g raspberries 100g blueberries 100g strawberries 2 tbsp maple syrup 1 tsp cinnamon Method 1. In a mixing bowl combine the grounded oat, egg, maple, olive oil and milk, mix well to ensure you have a smooth batter. Add the salt and cinnamon. 2. Preheat a non-stick frying pan over a medium heat. Once hot, spray the pan with the oil until you have a light covering – this should be around 4-5 sprays. Next slowly pour the mix into the pan. You should be able to fit 3 in, making sure each pancake measures around 9cm. After 1-2 minutes the pancake should be
a light golden brown, carefully flip and repeat on the other side. Keep
the pancakes warm. 3. Serve 3 pancakes on a plate and scatter with the raspberries, blueberries and strawberries, drizzle over the maple syrup and dust with the cinnamon. Enjoy it. Bee.
